Accordingly, the number of studies on the isolation and properties of the biologically active polyoses (polysaccharides) of animal and vegetable origin increased. Research concerning therapeutic and prophylactic efectiveness of chitin and its derivatives shows that high-molecular compounds, polysaccharides - polymers naturally occurring have significance, i.a., in medicine, pharmacy and cosmetology. In this article, a review covering shows applications of chitin and its derivatives in terms of their properties. Chitosan, the main chitin derivative is obtained by partial or full N-deacetylation of chitin, which is the structural element in the exoskeleton of crustaceans (such as crabs and shrimp) and cell walls of fungi. One of the parameters which characterize the degree of deacetylation of chitosan. Wider range of applications of chitosan obtained by the physicochemical modifications.
