Those are composed systems, which offer possibility of obtaining preparations of various properties and applications. Despite of the most often used simple emulsions that are widely used everyday, there exist also so-called "double emulsions" (multiple), which found common application in the cosmetic, pharmaceutical and food industry. The preparation of multiple emulsions is not so easy process. Success of this process depends on many factors among others appropriate selection of ingredients and emulsifers, as well as the method of preparation. Originally multiple emulsions were prepared in one-step method by agitation, however, currently to prepare them there are used special methods and devices.
